Berry Delicious
What you need:
- 4 egg yolks
- 4 egg whites
- 2 1/2 cups graham cracker crumbs
- 1 1/4 cup frozen raspberries
- 1 cup cream cheese, softened
- 1 cup frozen whipped topping, thawed
- 1/2 cup butter, melted
- 1/4 cup white sugar
- 2 tablespoons white sugar
- 1 1/4 teaspoons ground cinnamon
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
Mix together graham cracker crumbs, butter, sugar and cinnamon in a bowl. Press mixture into a 9×13-inch baking dish. Bake in a pre-heated oven (350 degrees F) for 5 minutes. Set aside to cool. Beat egg yolks in a bowl then add cream cheese. Beat together until smooth. In a separate bowl, beat together egg whites, cream of tartar and salt until foamy. Slowly add sugar. Scoop 1/3 of the egg white mixture and fold with the egg yolk mixture. Return new mixture to the bowl of remaining egg white mixture. Stir in whipped topping. Puree raspberries using a blender then press through a sieve. Pour half of the egg mixture into cooled crust then top with half of raspberries. Repeat with remaining egg mixture and raspberry puree. Refrigerate until firm.
